Applications
Ideal for long maceration processes in red wines.
This strain is especially suitable for aromatic white wines with terpenic precursors (Moscato, Traminer, Malvasia, Riesling) and for aromatic wines (Sauvignon Blanc, Müller, Soave, Chardonnay, Pinot Blanc, Veltliner etc.) If associated with the Atecrem 2H strain it creates a unique scent synergy, very fine and with an excellent balance of aromas.
Suggested doses: 20 g/hl.
Preparation
Follow the instructions in:
> “Atecrem yeasts general instructions” (Supplement A)
> “Starter must /leaven general protocol for musts and partially fermented wines” (Supplement B)
> “Secondary fermentation general protocol: autoclave refermentation” (Supplement D).
