Saccharomyces cereviasiae yeast in cream form.
Product for oenological professional use Reg. EC n. 606/2009.
Applications
It is especially appropriate for very exclusive white, rosé and red (Merlot, Cabernet, Sangiovese, Barbera) wines and in thermal and microbiological stress situations. It guarantees good fermentation even in difficult environmental conditions, and shows an especially strong fermentation strength.
It has a killer factor that makes it possible for it to colonise the must quickly. It can survive in difficult conditions such as low turbidity, extreme temperatures or high alcohol content. It produces fairly strong flowery and fruity aromas.
Suggested doses: 20 g/hl.
Preparation
Follow the instructions in:

> “Starter must /leaven general protocol for musts and partially fermented wines” (Supplement B)
> “Secondary fermentation general protocol: autoclave refermentation” (Supplement D).
