Applications
For white wine production, as it enhances the floral overtones in aromatic wines. Especially suitable for white wines (Prosecco, Greco, Fiano, Pinot Bianco, Trebbiano, Ribolla, Friulano, Garganega, etc.) and re-fermentation. Recommended, together with Atecrem 13H, for the production of Prosecco, Moscato and aromatic sparkling wines.
Suggested doses: 20 g/hl.
Preparation
Follow the instructions in:
> “Atecrem yeasts general instructions” (Supplement B)
> “starter must /leaven general protocol for musts and partially fermented wines” (Supplement B)
> “Secondary fermentation general protocol: autoclave re-fermentation” (Supplement D).
