
ESALTAN
This is a pyrogallic tannin, extracted through steam distillation, with a strong antiseptic power against moulds and bacteria.
Composition: Oak tannin.
Product for professional use in oenology – Reg. EC n. 606/2009.
Applications
Especially suitable for red wine making, to increase the wine’s structure and colour intensity; 10 g/hl let total polyphenols increase by about 98 mg/l (measurement with the Folin method).
In red grapes maceration, it fixes anthocyanins to stabilise the colour through co-pigmentation.
Suitable also for white wines to be aged in wooden casks. Suggested doses: 10 to 35 g/hl for red wines, 5 to 20 g/hl for white wines. Dissolve in hot water, in a 1:10 proportion, at the moment of use.
