High activity pectolytic enzymes, active on glucans and xylans protein-associated.
Composition: Polygalacturonase, pectinesterase, pectin lyase, glucanase, xylanase, and protein-xylanase.
For oenological professional use EC Reg n.606/2009.
Applications
Add in must in pre-fermentation.
Suggested dosage: 1-2 g/hl.
Preparation
Dissolve in water at 20°C, ratio 1:10.
