PROTEOFAST

Natural stimulant and regulator of the fermentation metabolism of yeasts, derived from the enzymatic lysis of the yeast nucleus.

Composition: Yeast nucleus extract.

Product for professional use in oenology – Reg. EC n. 606/2009.

Applications

This product is recommended to streamline the yeast reproduction and fermentation phase, as its short assimilation time (15-20 minutes after addition) makes it especially suitable for secondary fermentation and in difficult fermentation situations.

It is a valid replacement for the addition of ammonium salts and thiamine of synthetic origin.

Suggested doses: from 5 to 40 g/hl.

Preparation

It must be dissolved in must or wine, in a 1:10 proportion, at the moment of use, or, if earlier, not more than one hour in advance.

Shelf Life
